Coconut Rice

 

 

 

 

 
Equipment:
  • Medium frying pan for frying
  • Pressure Cooker / Big Pot with Lid for cooking rice
Ingredients:
  • Rice – 1 cup
  • Water – 2 cups
  • Grated coconut – 1/2 cup
  • Green Chillies – 6
  • Red Chillies – 1
  • Peanuts or Cashews – 2 tablespoons
  • Mustard Seeds – 1 teaspoon
  • Chana Daal – 2 teaspoons
  • Urad Daal – 2 teaspoons
  • Hing – a small pinch
  • Curry Leaves – 10-12 leaves
  • Sesame oil or canola oil – 2 tablespoon
  • Salt – 3/4 teaspoon
Preparation:

1. Cook 1 cup rice by adding 2 cups of water. Allow it to completely cool down

2. Heat the oil and add mustard seeds. Once they start sputtering, add red chillies, chana daal, urad daal, peanuts(or cashews) and let them fry for few seconds

3. Add curry leaves and split green chillies.

4. Add coconut to this and sautee for 30 seconds

6. Add rice to this mixture and mix well.

7. Yummy coconut rice is ready to be enjoyed
